Recipe #9 - Parmesan Chicken Nuggets

INGREDIENTS

1 pound boneless, skinless chicken breasts, cut into bite-size cubes
3 tablespoons butter, melted
1 cup Panko bread crumbs
1/2 cup Parmesan cheese
1/2 teaspoon Kosher salt

METHOD

Preheat oven to 350. Line a baking sheet with parchment.

In a medium bowl, mix together Panko, Parmesan, and salt; set aside. Put melted butter in a pie plate or other shallow dish.

Dip chicken into butter and then coat with Panko mixture. Place on baking sheet in a single layer. Bake for 25 – 30 minutes or until chicken is cooked through.

Movie Nights

Okay, I have to admit, I only got 10 Things I Hate About You because of Joseph Gordon-Levitt, and I actually found it pretty good. I think this is one of my best classic teen movies from the 90s. Great cast, too. From an ill-tempered outcast to Joker, we all knew where Heath Ledger’s career is going. JGL is just adorable, I want to kiss him! But um, whatever happened to Julia Stiles and The-Secret –World-of-Alex-Mack Larisa Oleynik?

I shouldn’t be surprised that my 11-year old sister who loathes everything Twilight wants to watch Vampires Suck with me. Although there are some badly written lines, there are still few that gave us chuckles. I just can’t bear seeing the lead actress imitate K-Stew with her awkward, quirky self. Matt Lanter is amusing, because he is well, Matt Lanter. But everything else, is just as bad as Twilight.

Brothers, on the other hand, did not disappoint. Magnificent performances of the three leads, especially the transformation of Tobey Maguire in the latter part of the movie. Although some people say that this is no match from the original Danish film, Brødre, where it focuses on the horror of war, and of family life while a soldier is away and comes back, I think in this adaptation, it’s the actors that makes this film so great.

Good thing I was able to catch Ghosts of Girlfriends Past on HBO, for it was an enjoyable funny movie. A romantic comedy loosely based on Charles Dicken’s  A Christmas Carol. Matthew McConaughey and Jennifer Garner are both charmers but Emma Stone is definitely the scene stealer in this film!

I don’t know if I can include Sorority Wars in this movie list because it doesn’t feel like a movie at all. It is light and quite entertaining, but living in the third world, I just can’t relate to all these sorority feuds. This movie is good if you don’t have anything to do.

Kitchen Fun: Grilled Cheese Sandwich with Bacon

Recipe #7 - Grilled Cheese with Bacon

INGREDIENTS

French or Italian loaf bread, sliced
Bacon, cooked
Sharp white cheddar cheese (high quality)
Butter, softened and spreadable

METHOD

1. Heat a cast iron skillet to medium high heat. Layer your sandwich – bread slice, cheese, bacon, bread slice. Spread butter over the top of the sandwich. Place the sandwich top side down (butter side down) on the hot pan. Butter the exposed side of the sandwich. Let cook for a minute and then use a metal spatula to turn the sandwich over to its other side.

2 While you are toasting the sandwich on the remaining side, press down on the sandwich with a spatula. Alternatively, you can mimic a panini press (albeit without the ridges) by heating a smaller cast iron pan on a separate burner. Use the weight of this pan to press down on the sandwich from above.

The sandwich is done when the sides are toasted and the cheese is melted. Cut in half and serve.

So the other day

After my visit to the dentist, my family and I decided to go to the mall. And oh boy, my dad is in a super good mood! And by that I mean this:

Clockwise: Lappy for Mum, Cellphone for Dad (he just refuses to own a blackberry), router for wider internet range, and iPhone covers for me :)

New gadgets! I really didn’t know what has gotten into my dad, but I do hope he gets in a super kadooper good mood again real soon!

Oh, how I love my dad~ <3

The Girl With a Homemade Spa

The supermarket is my favorite place in the world. Ever since last weekend, I have been itching for a quick trip to the grocery store. While I’m making a list of what I wanted to buy, I came across an article about homemade Facial Masks. Next thing I knew, I have three open browsers full of homemade stuff tabs!

Because I live in the third world and the ingredients are usually very limited, my future homemade spa career has gone downhill before it even begun.

But here are my favorites by far:

Egg Whites and Lemon Facial Mask

2 Egg Whites, 1 teaspoon of lemon juice

Combine the lemon juice and egg white in a bowl. Beat until fluffy. Apply to your face, avoid getting too close to your eyes. Wait for 10-20 minutes and rinse off with warm water.

Banana, Honey, Lemon Facial Mask

1 banana, 1 tbsp of honey, one orange or lemon

Combine the banana and honey at the same time, put in a handful drop of lemon or lime juice, put on to your neck and face by leaving the concoction for fifteen minutes. You can rinse it thoroughly by using warm water.

Brown Sugar Body Scrub

About 1 cup brown sugar, 2 tbsp sea salt, 1/4 cup oil, 3-4 drops essential oil

Once the ingredients have been gathered simply mix them all together in a bowl and transfer them to the airtight container. This mixture will keep in the shower for about two weeks. It can also be stored in the fridge for one month.
